Ingredients:
- 3 medium size sweet potatoes peeled & diced into cubes
- Salt & pepper and other spices of your choice (see notes)
- 1 to 2 tablespoons olive oil
- 1 lb lean ground beef
- 2 tablespoons Ope Sorry! It's A Little Spicy Seasoning
- 1/3 cup water
- 2 cups cottage cheese
- 2 to 3 avocados, diced
- Hot honey (I highly recommend Doc Spicy Honey from Arnold's Misfit Acres)
Instructions:
For the sweet potatoes:
- Preheat oven to 425 F and line a baking sheet with parchment.
- In a large bowl toss together the olive oil, cubed sweet potatoes and seasonings of your choice. Spread onto the prepared baking sheet and bake for 25 to 30 minutes or until potatoes are fork tender. Stir them halfway through the cooking time.
For the ground beef:
While the sweet potatoes are baking, make the beef mixture. In a skillet, brown the ground beef over medium heat, breaking it up as you go. Drain any excess grease and add the taco seasoning and water and mix well. Set aside.
Assembling the bowls:
Arrange some seasoned ground beef and some roasted sweet potatoes in a bowl. Add a 1/2 cup of cottage cheese and some cubed avocado. Drizzle everything with hot honey.
